Carrot Apple Birthday Cake
1 1/2 c. flour
1 c. wheat germ
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 1/2 c. grated carrots
1/2 c. unsweetened apple sauce
1 egg
1/4 c. honey, molasses or maple syrup (I used maple syrup since we make our own!)
3 tbsp. oil
1 c. liquid (water, milk or powdered milk mixed with water)
1. Combine dry ingredients and carrots in medium sized bowl.
2. Beat the egg. Add the sweetner, oil and liquid and mix well. Add the dry ingredients and mix together.
3. Pour into a lightly greased pan and bake at 350F for 30-35 minutes, or until cake tester come out clean. Let cool completly before frosting.
Cream Cheese Frosting: Mix 1/4 c. milk or water with 8 oz. pkg. cream cheese. Add more liquid if necessary to achieve spreading consistency.
Peanut Butter Frosting: Mix 1/4 c. milk or water with 1c. smooth peanut butter. Add more liquid if necessary to achieve spreading consistency.
Store in fridge.
