this is yummy with rice - i dont have measurements but ill tell you roughly what and how much i use...
serves about 3
4 chicken breasts, diced
1 large onion
garlic cloves - i usually use about 3 or u can use a large tablespoon of the garlic in a jar
chicken stock cube to make stock and to season
crunchy peanut butter - about 2/3 tablespoons - depending on taste
fry the onions and garlic in butter untill soft and golden. transfer to bowl. fry the chicken in a little oil untill fully cooked then add the onion and garlic. add some of the chicken stock - not alot - just enough to make a sauce - add the peanut butter and stir into the chicken stock - it should be quite thick - not runny or watery. taste and if it needs it crumble a little of the chicken stock cube in.
serve with fresh white/brown rice and a side green salad. this is so yummy - you really have got to try it!
