What are some of your favorite cookie recipes?

Soft Chocolate Chip Cookies


4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)


Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Chocolate Marshmallow Cookies

This has been one of our family favorites for years -- chocolate-marshmallow combination is delicious!

Ingredients:
1 3/4 cup flour
1 teaspoon soda
1/2 teaspoon salt
1/2 cup cocoa
1/2 cup shortening
1 cup sugar
1 egg
1/4 cup milk
1 teaspoon vanilla
1/2 cup coarsely chopped pecans
halved marshmallows

Directions:
Sift together flour, soda, salt and cocoa. Cream sugar and shortening. Add egg and milk mixing well. Mix in dry ingredients. Add nuts. Drop by teaspoon onto greased cookie sheets. Bake 8 minutes in a 350 degree oven. Remove cookie sheet and put half of a large marshamallow, cut side down, on each cookie. Bake 2 minutes (NO MORE). Cool. Frost with icing (and top with pecan half if desired).

To make icing: Combine 5 teaspoons cocoa, 2 cups powdered sugar, dash of salt, 3 tablespoons melted butter and 4 tablespoons light cream (or milk).

Chocolate Crinkle Cookies

1/2 cup vegetable oil
4 squares of unsweetened chocolate (melted)
2 cups granulated sugar
4 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

1 cup powdered sugar
Mix oil, melted chocolate and granulated sugar. Blend in one egg at a time until well mixed. Add vanilla. Mix dry ingredients together and stir into oil mixture. Cover and chill dough for several hours or overnight.

Heat oven to 350 degrees. Put a teaspoonful of chilled dough in the palm of your hands and make a ball. You may have to "grease your hands" with oil or shortening. Roll the ball of dough around in the powdered sugar until all it's surface is covered. Place the balls of dough about 2 inches apart on a greased baking sheet. Bake about 10 to 12 minutes. Do not overbake. Overbaking changes the texture of the cookies from a soft cookie to a harder cookie.

Makes about 5 to 6 dozen cookies.

You'll love them! I usually make them at Christmas time. When the cookies spread, the powdered sugar spreads too and creates the "crinkle" effect.

Sour Cream Cookies
2 1/2 Cups sifted flour 1 1/2 Cups brown sugar
1tsp baking soda 2 eggs
1/2 tsp salt 1 tsp vanilla
1/2 Cup butter 1 Cup sour cream 2/3 Cup Nuts
1.Sift flour,soda and salt together
2. Cream butter, add brown sugar and cream well
3.Add eggs one at a time,cream after each addition. Add vanilla
4.Add sifted dry ingredients and sour cream. Blens well
5.Fold in chopped nuts
6.Drop by teaspoon fulls onto greeased cookie sheet.
7.Bake at 350 degrees for 12-15 minutes
8.While hot, frost with browned butter frosting
Browned Butter Frosting
1/3 cup of butter 2 tsp Hot Water
1 1/2 Cups powdered Sugar 1tsp Vanilla
Brown the butter in a saucepan(be careful not to burn it)
Add powdered Sugar gradually
Beat until smooth, add vanilla.

1/8 tsp. salt
1 cup sifted powdered sugar
1/4 tsp. vanilla
FOR COOKIES: beat 1 cup butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add 1 cup powdered sugar and beat until combined. Beat in 1 Tbsp. vanilla until combined. Beat in as much as the flour as you can with the mixer. Stir in any remaining flour and the nuts with a wooden spoon.

PREHEAT oven to 375 degrees. Shape dough into 1 1/4" balls. Place 1 inch apart on an ungreased cookie sheet. Press your thumb into the center of each ball. Bake for 11-13 minutes or until edges are lightly browned. Transfer cookies to a wire rack and cool.
FOR THE PRALINE TOPPING: Combine the 1/4 cup butter, brown sugar, evaporated milk or cream, and salt in a medium saucepan. Cook and stir over medium heat until bubbly. Reduce heat to medium-low. Cook and stir 5 minutes. Remove from heat and stir in 1 cup powdered sugar and 1/4 tsp. vanilla. if necessary, return to heat to dissolve sugar for a smooth sauce. Working quickly, fill each cookie with about 1 teaspoon of topping. Let stand2 20-30 minutes or until topping is set. Makes about 36 cookies

My family likes these oatmeal raisin cookies.

The Best Oatmeal Cookies
3 eggs, well beaten
1 cup raisins
1 tsp. vanilla
1 cup butter
1 cup brown sugar
1 cup white sugar
2 1/2 cups all-purpose flour
1 tsp. salt
2 tsp. baking soda
1 tsp. ground cinnamon
2 cups oatmeal
Combine eggs, raisins, and vanilla and let stand one hour covered with plastic wrap.
Cream together butter and sugars. Add flour, salt, cinnamon and baking soda to sugar mixture. Mix well. Blend in egg and raisin mixture and oatmeal.

Drop by heaping teaspoonfuls onto ungreased cookie sheet. Bake 350 degrees for 10-12 minutes or til lightly browned.

Note: secret is soaking the raisins

im totally going to try that marshmallow cookie recipe.
Actually, the one on the Quaker oatmeal container is the one I use an it's great. It's inside the lid, I think.
