2labs4us 09-09-2006, 06:04 PM Anyone out there have any simple crockpot recipes? As you all know, with the kids and the dogs, something fast that I can leave all day would be great! Recipes with chicken or a stew of some sort would be a big hit, but I'm open to all suggestions. NH will be pretty cold soon! Thanks for you help!

Hidden Valley Ranch Roast
1 4-5 pound beef roast
1 packet of Hidden Valley Ranch Dressing
1 pound of baby carrots
4-5 medium potatoes, peeled and quartered
1 cup of water
*you can adjust the veggies with the amount you need or the kinds you prefer.
1.Place veggies in bottom of the crockpot, then place roast on veggies.
2. Mix ranch dressing in 1 cup of water and pour over meat.
3. Cook on low 6-8 hours.
Serve with a crusty bread.
Kielbasa Bake
1 Polish Kielbasa ring
1 package of Hebrew National sauerkraut (can substitute canned)
16 oz can of canned baby potatoes
1/4 cup of water
1 tbsp horseradish (can leave out if you don't like)
2 tbsp spicy brown mustard
1. Mix canned potatoes & sauerkraut in bottom of crockpot.
2. Cut the kielbasa in 4 sections, and place on potatoes/kraut.
3. Mix horseradish, mustard, and water and pour in crockpot.
4. Cook on low 2-3 hours.
Simple Meatballs & Sauce
I tend to not like meatballs cooked in the crockpot, because the meat comes out with a texture I don't like...........sooooo, when frozen meatballs are on sale:
1 package of frozen meatballs
1 jar of favorite spaghetti sauce
1 bag of frozen red and green pepper strips
Mix in crockpot, cook on low 3-4 hours (although I have left this in the crockpot for close to 8 hours while I was at work).
Serve with cooked pasta, or white rice, or grinder rolls. If doing grinder rolls, just top with fresh shredded cheese for meatball grinder!
Once fall comes, I cook 2-3 times a week in my crockpot. It's nice to come home to dinner already made. I also am in LOVE with the crockpot bag-liners made by Reynolds. They make clean up so easy!
I have more recipes, but I didn't want to seem like a crock-pot maniac :D
Nikki - I would love more crock pot recipes. I rarely use mine but I would like to use it more. Do you have any recipes that has chicken in it? I have a picky eater who will only eat chicken :rolleyes:

Sticky Chicken
*please note, DO NOT use a crock-pot liner for this recipe.
4-5 pound oven stuffer chicken (make sure it will fit in your crock)
6 cloves of garlic
salt
pepper
butter
foil
1. Take your aluminum foil and tear off 3-4 sheets of foil. And then ball up each sheet up in the size of a fist (yes, I know, this is a waste of foil). Place the balls on the bottom of the crock pot.
2. Rinse chicken well and remove all any bagged parts from the cavity of the chicken.
3. Salt, pepper, and butter rub your chicken, place on foil balls in crockpot, breast side up. You can remove your pop-up timer if you like, I usually leave mine in.
4. Take the 6 cloves of garlic and place in the cavity of the chicken.
5. Cover and cook for 6-8 hours on low. Remove the garlic cloves from the chicken and then slowly remove chicken from crock and place on platter. Chicken will fall right off the bone, so make sure your platter is VERY close to your crock.
***Do NOT add any liquids to the crockpot, leave dry!***
Serve with your choice of potatoes, veggies, rice, etc. Excellent chicken.
The foils is suppose to help "rotisserie" the chicken skin. My mom makes this, and I got the recipe from her.

4-6 boneless, skinless chicken breasts
1 jar of your fave spaghetti sauce
1 bag frozen green peppers, green peppers, and onions (could also thin slice fresh veggies)
1 can of mushrooms or 1 package of fresh white mushrooms (I don't like them)
1. Mix the sauce & veggies in crockpot, place chicken in crockpot, and make sure to sppon sauce over breasts so they are completely covered. Salt and pepper lightly.
2. Cook on low 6-8 hours.
Serve over pasta or rice. Even with mashed potatoes would work.
Russian Cranberry Chicken
1 bottle Russian dressing
1 envelope onion soup mix
1 jar of cranberry sauce (I use jellied, you could use whole I would think)
4 chicken breasts (could use legs quarters, drumsticks, or thighs)
1. Mix dressing, soup mix, and cranberry sauce in crock pot. Mix in chicken and cover well with sauce.
2. Cook low 6-8 hours. ~~~Chicken tastes sweet, just be aware~~~

3-4 pounds of chicken - breasts, legs, thighs, or quarters
1 bottle of BBQ sauce, atleast 16 oz
1. Chicken in crockpot, and then cover with BBQ sauce.
2. Cook low 6-8 hours
Chicken & Beans
4 to 6 boneless chicken breasts
1 bag of frozen green beans
1 bag of frozen yellow beans
1 cup of Italian salad dressing
1. Put both bags of beans on the bottom of the crockpot. Place chicken on top of beans.
2. Pour 1 cup of Italian salad dressing over beans/chicken. Don't salt, but definately pepper.
3. Cook low 6-8 hours
You weren't kidding that you had a lot of crock pot recipes :D
I am sure that I made that Russian Cranberry Chicken before for a church dinner just not in a crockpot. I might have to make a few of these. I might even try the whole chicken one tomorrow!

Thai Chicken Thighs
8 chicken thighs (boneless, skinless), 2 tbsp. lime juice
½ c. chicken stock , 1 hot chili pepper
¼ c. peanut butter, 2 tsp. grated fresh ginger
¼ c. soy sauce
Place chicken in slow cooker. Mix together remaining ingredients. Pour over chicken and cook on low for six to eight hours. Sometimes I need to thicken the sauce with a little flour or cornstarch. I like to serve it over whole wheat spaghetti. You can dress it up with some chopped peanuts, or coriander before serving.

Where to start?
I have this great easy recipe for pulled chicken sandwiches:
1lb boneless chicken thighs (really any amount that you want!)
1 red pepper - sliced
Jamaican Jerk rub
Chicken broth.
Place chicken thighs on bottom of crockpot. Add peppers, and sprinkle generously with rub. Add enough stock to cover.
Cook on low for 6-8 hours. Right before serving, pull chicken with two forks - really easy when cooked for this long. Serve on hoagies!
I did this from metory - I think it's right! Ha!!

Mix 2 cans of soup and milk. Layer 1/2 potatoes and onions in crockpot, cover with 1/2 of soup & milk. Layer the other 1/2 of potatoes & onions and cover with remain soup & milk.
Cook low 6-8 hours, or high 3-4 hours.
*Before serving, you can stir in 2 tablespoons of sour cream. Not a must if you don't like sour cream.
This is really good for when you just want to grill boneless pork chops or boneless chicken breasts on the stovetop or on a foreman grill, your side dish is ready to go.

FALL APART SLOW ROAST PORK
1 PORK BUTT ( ABOUT 4 LBS )
1/4 TO 1/3 CUP WORCESTERSHIRE SAUCE
3/4 CUP BROWN SUAGAR
1 CUP APPLE JUICE
1/2 TEASPOON SALT
Rub the Worcestershire sauce all over the pork butt...Then press the brown sugar all over making like a crust. Place it in the slow cooker. Pour the apple juice in without getting on the roast. Cook on High for 30 mins then reduce to low and cook all day 10-12 hours Remove the meat and add the salt to the juice. Pull pork apart and serve with the juices.

Easy Beef Stroganoff
2 pounds of stew beef or beef tips, cut into cubes
1 envelope onion soup mix
1 can cream of celery soup
1 can cream of mushroom soup
2 cups of sour cream - HOLD until last 10 minutes of cooking
Cook low 6-8 hours. 10 minutes before you are ready to serve (usually while I am cooking my egg noodles or minute rice), stir in 2 cups of sour cream & turn crockpot on high. This really thickens the sauce.

Asquared 09-11-2006, 07:23 PM I tried to be chef-like and make a roast last night by using a roasting pan instead of the crockpot. What a disaster. I should have taken pics. It ended up in the dog's dinner bowls, pretty raw (lightly seared on the outside).
I think I'll stick to the crockpot. :(

Chicken and Dumplings
(Most times I use a cut up chicken or even just chicken breasts)
3 pound whole chicken
salt and pepper
2 cloves minced garlic
1/4 tablespoon powdered marjoram
1/4 teaspoon powdered thyme
1 bay leaf
1/2 cup dry white wine
1 cup sour cream
1 cup Bisquick baking mix
1 tablespoon chopped parsley
6 tablespoons milk
10 small white onions
Sprinkle chicken with salt and pepper, place in crockpot. Insert cloves in one onion. Put all onions into pot. Add garlic, marjoram, thyme, bay leaf and wine. Cover and cook on low 5 to 6 hours. Remove bay leaf and cloves of garlic. Stir in sour cream.
Increase heat to high. Combine biscuit mix with parsley, stir in milk and mix until well moistened. Drop dumplings from teaspoon around edge of pot. Cover and cook on high for 30 minutes.

16 ounces extra lean ground turkey or beef
1 cup chopped onion
2 cups (one 16 ounce can) tomatoes,
coarsely chopped and undrained
1 (10 3/4 ounce) can Healthy Request
Tomato Soup
1 cup reduced-sodium tomato juice
2 teaspoons chili seasoning
6 ounces (one 8 ounce can) red kidney
beans, rinsed and drained
1 cup elbow macaroni
In a large skillet sprayed with olive oil flavored cooking spray, brown meat. Meanwhile, in a slow cooker container sprayed with cooking spray, combine onion, undrained tomatoes, tomato soup, tomato juice, and chili seasoning. Stir in kidney beans and uncooked macaroni. Add browned meat. Mix well to combine. Cover and cook on LOW for 6 to 8 hours. Mix well before serving.
Serves 6 (1 full cup)

Swiss Chicken Casserole (8 Points)
1 serving = 8points
1 package of stove top stuffing mix
4-6 boneless/skinless chicken breasts
4 slices of Swiss cheese
1 can of reduced fat cream of mushroom soup
Take 1 package of stove top stuffing mix and mix both drypackets together. Do not add water yet. Place in a sprayed (with Pam) crockpot. Place the 4-6 boneless, skinless chicken breasts on top of the stuffing. Place the Swiss Cheese on top of the chicken and then spread the reduced fat cream of mushroom soup on top of the chicken and cheese. Spread evenly. Drizzle 1/4 - 1/2 cup of warm water around the edges. Cook on low in crockpot all day. If you don't use or have a crockpot you can cook it in the oven at 350 degrees for an hour.

1 lg jar/can salsa
let cook 6-8hrs
use for burritos or tacos, super easy
veggie soup
1 pkg mixed frozen veggies of your choice
1 can garbanzos with its juice
1 can kidney beans with its juice
1-2 lg cans stewed or diced tomatoes
salt, pepper, garlic powder
cook 4-6 hrs.
can use whatever veggies you want, sometimes I'll add green beans or corn, lima beans, up to you on your favorites
Just tried this one Really yummy, even cold. I think Kendal and Rex were hoping for left overs.
Amazing Pork Tenderloin in Slow Cooker
1- 2lb. pork tenderloin
1 envelope onion soup mix
1 cup water
3/4 cup red wine
3 tbsp. minced garlic
3 tbsp. soy sauce
freshly ground pepper to taste
Place pork tenderloin in slow cooker with the onion soup mix. Pour water, wine and soy sauce over top, turning the pork to coat. Carefully spread the garlic over top, leaving as much on top of the roast during cooking as possible. Sprinkle with pepper, cover and cook on low setting for 4 hours. Serve with liquid on side as au jus.

This weekend I am really going to try to find some of my other crock-pot recipes and post them.
I am actually trying a new one this weekend with ham, carrots, peeled baby potatoes, pearl onions, and then mixing 2 tablespoons of dijon mustard in 2 cups of water and then cooking low 6-8 hours. I plan on serving with artisian bread.

That is seriously my favorite crock pot recipe. The roast comes out so tender.
I have also skipped the veggies and just cooked a beef roast all day on a Sunday and then made mashed potatoes to go with it.

Laurie 09-16-2006, 10:58 AM I love my crockpot for soups especially! I make a Minestrone that has pretty much everything in the kitchen sink in it...lol..
Here's something that I make in the crockpot that always seems consistent:
Spanish Rice (so easy...is there any other way?..LOL)
You need:
1 1/2 lbs of ground beef (extra lean)
1 med onion chopped
1 bell pepper chopped (colour optional...green?yellow?orange?whatever)
1 large can of whole tomatoes or your own stewed
1 8oz can of tomato sauce or your own;)
1 cup of water (at least...I often add a bit more depending on consistency)
2 1/2tsp of chili powder
1/2 tsp of salt
3 tsp of worcestershire sauce
1 tbs of brown sugar
3/4 cup of raw converted rice (like Uncle Ben's)
Just cook your ground beef & drain...put ingredients in the pot Stir thoroughly & cover & cook on Low for about 7 hours or High for about 3...
As with everything, I sample & add more of what I think might be needed...like for instance, my salt in this recipe would be garlic salt but that's just me...:brow:

1/2 to 1 teaspoon liquid smoke flavoring, to taste
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
Approx. 4lbs boneless chuck roast
(we usually use less meat since there's just 2 of us. no biggie, we just have extra sauce!)
Prep:
Combine ketchup, brown sugar, vinegar, dijon mustard, worcestershire sauce, and liquid smoke in a bowl. Stir in salt, pepper and garlic powder. Place chuck roast in slow cooker; pour ketchup mixture over the chuck roast, making sure all meat is covered. Cover and cook on low for 8 to 10 hours. (I usually do 6 to 8 and it works fine.)
Remove roast from slow cooker and shred with forks; return to slow cooker, stir, and continue cooking for about 1 hour longer.
Serve beef with strainer spoon on rolls or buns of your choice! Enjoy!
This recipe is really yummy with traditional BBQ dinner sides...corn on the cob, baked beans, potato salad, etc. Mmm!

Sweet Italian Sausage links
1 Large Onion (julienned)
2 Large Green Peppers (julieened)
Soy Sauce
Italian Seasoning
Hoagie Rolls
Shredded Mozzarella Cheese
Brown Sausage in a generous amount of butter, remove. Place the Italian sausage links and remnants from the pan into slow cooker and top with onions and peppers. Pour in just enough cold water to barely cover. Sprinkle generously with Italian Seasoning and Soy Sauce. Taste the liquid, you want to be able to taste the soy sauce without it being too salty. Stir to coat everything . Cover, and cook on Low for 6 hours. Toast Hoagie rolls under broiler then top with mozzarella and melt (add some pasta or pizza sauce if desired). Top with sausage mixture and a little more mozzarella and melt once more. The initial cheese seals your roll so it doesn't become soggy. This recipe can also be done on top of the stove for a quicker version and will turn out just as tasty.

I just seasoned it with Bell's Turkey seasoning and put a couple pats of butter on it, and set it on low.
I started it at 8AM and will get home at about 5pm. Can't wait to see how it turns out!

bigdogmom 09-22-2006, 10:19 AM Just had to repost my applesauce recipe in this section -- especially since it's apple time of year!
It's the easiest way to make sauce. I NEVER made it when I had to stand over the stove for hours. Now I make a batch nearly every week in the fall.
I peel & core my apples & toss them in my crockpot until it is full. Then I sprinkle them with 1/4 tsp of cinnamon (or as much as you want) & cook them on low overnight (about 8 hours). In the morning, I take a wooden spoon to mix it all up & it's done!
The apples are sweet enough, that you don't need any sugar & with a crockpot, you don't need to add water.

1 Package Taco Seasoning
1 Medium Onion, chopped
30 oz. Water
Pepper to Taste
Brown meat and onion in a skillet; drain; place in crockpot with remaining ingredients. Cook on low 6-8 hours.
Top with: Tortilla chips, cheese, fresh cilantro, avacado, etc
This is really simple but it's so good and everybody always seems to love it! lol

2-4 chicken breasts in bottom of crock pot
1/4 cup lemon juice
1 packet of Italian salad dressing mix (dry) Sprinkle on top
pour on 1/4 cup melted butter
last 10 min sprinkle with parm cheese
cook on low all day or high for 3-4 hours
I add all sorts of veggies--red potatoes, peppers, onions, etc. DH LOVES this!

16 oz. Raw Skinless Chicken Breast, cubed
2 Parsnips
2 Carrots
1 Acorn Squash
1 (14.5 oz.) Can Fat Free Chicken Broth

1/8 Cup Honey

Nutmeg
Peel and chop carrots and parsnips and place them into the bottom of the crockpot. Sprinkle with garlic. Place cubed chicken on top. Pour in broth. Cut squash into chunks and slice off the skin, then toss the squash with the honey in a medium bowl. Place squash on top of chicken. Sprinkle with desired amounts of salt, pepper and nutmeg. Cook on low 8-10 hours.
Note: Once the dish has cooked, if you mix it up too much, the squash will fall apart.

Maple Apple Pudding
Makes 6 to 8 servings
Prep: 15 minutes
Bake: 40 minutes
Ingredients
2/3 cup maple syrup
1-1/2 teaspoons cornstarch
1 cup water
1 tablespoon butter
1 cup all-purpose flour
2 tablespoons sugar
1-1/2 teaspoons baking powder
3 tablespoons butter
1-1/2 cups chopped, peeled apples
1/3 cup milk
1/2 teaspoon vanilla
2 teaspoons sugar
1/4 teaspoon ground cinnamon
1 teaspoon butter
Whipped cream
Directions
1. In a saucepan, combine water, maple syrup, and cornstarch. Cook and stir until boiling. Cook and stir for 2 minutes more.
2. Add the 1 tablespoon butter. Pour into an 8x8x2-inch baking dish or baking pan (2-quart square).
3. In a medium mixing bowl, stir together the flour, the 2 tablespoons sugar, and the baking powder. Cut in the 3 tablespoons butter until mixture resembles coarse crumbs. Stir in the apples. Add the milk and vanilla; stir just until batter is moistened.
4. Using a tablespoon, drop the apple batter into the warm syrup mixture in the baking dish or baking pan. Combine the remaining 2 teaspoons sugar and the cinnamon. Sprinkle the cinnamon sugar over the batter in the baking dish. Dot the top with the remaining 1 teaspoon butter.
5. Bake the dessert in a 350 degree F oven for about 40 minutes. Serve the maple dessert warm, topped with whippedcream. Makes 6 to 8

Tomorrow I am doing sliced Polish Kielbasa, peeled and sliced red potatoes, 1 sliced vidala onion with 1 cup of water and 3 tbsp on Grey Poupon in the crockpot!

4 pork chops, each about 1/2 inch thick
2 medium onions, chopped
2 celery ribs, chopped

2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce

2 tablespoons water
Add all ingredients except water and cornstarch to the crockpot. Cook on LOW for 5 1/2 hours.
Mix cornstarch and water together and stir into crockpot. Cook 30 minutes more.
Serve over rice.

1 cup red wine
2 tablespoons vegetable oil
1/2 teaspoon thyme
2 tablespoons parsley sprigs, chopped
1 bay leaf
1/4 teaspoon black pepper
3 slices bacon, chopped
2 pounds stewing beef, cut into chunks
12 small boiling onions, peeled
1/2 pound mushrooms, sliced
2 cloves garlic, minced
1 cup canned beef broth
Salt to taste
In a large bowl, combine the first 6 ingredients and refrigerate overnight.
Drain the meat reserving the liquid. Brown the bacon over medium heat. When the bacon is cooked, add the beef, onion mixture and brown lightly.
Put browned meat mixture into a crockpot. Add the remaining ingredients. Cover the crockpot and cook on LOW for about 8 hours.
Serve over buttered noodles or rice.

Hidden Valley Ranch Roast
1 4-5 pound beef roast
1 packet of Hidden Valley Ranch Dressing
1 pound of baby carrots
4-5 medium potatoes, peeled and quartered
1 cup of water
*you can adjust the veggies with the amount you need or the kinds you prefer.
1.Place veggies in bottom of the crockpot, then place roast on veggies.
2. Mix ranch dressing in 1 cup of water and pour over meat.
3. Cook on low 6-8 hours.
Serve with a crusty bread.
I tried it last night and it was really good, but I couldn't taste any "ranch-y-ness"??? I only had a 2.5lb roast too. Hmm...

StacC 10-07-2006, 07:59 AM Cajun red beans and rice
This recipe can be easily fit into a 5 or 6 quart crock pot, but if you only have a 3 quart, only use half a package of beans and adjust everything accordingly.
Chicken broth/water to 1-2 inches above beans – if only using water, add more salt. I generally don’t use more than 1-2 cans broth, with the rest water.
½ teaspoon black pepper
Handful of chopped onions, optional
6 heaping tablespoons Tony Chachere’s seasoning (or any Cajun seasoning)
1 package dry red beans
1 teaspoon minced garlic (from a jar is fine)
Optional: polska kielbasa sausage (turkey sausage works fine if you’re watching your health, I use about half of the U-shape pack per half package of beans)
Let the dry “small red beans” (I like Goya) sit overnight (more like 8 hours than 12) at room temperature in a bowl of water (well above top of beans, they will swell). The next morning, pour off most of the soaking water and add the beans to the Crock pot. Fill with chicken broth and water to 2 inches above beans (they will be considerably bigger after soaking) and add all other ingredients. If you’re adding sausage, and you want to cook some of the fat out, cut into pieces (I cut into wheel-shaped pieces and then in half to make little half wheels) and sauté until brown, draining off any grease before adding sausage to pot. If you don’t care about the fat, just chop them and dump in with everything else. Cook on high for an hour (I do this while I get ready in the morning), then low for 9-10 hours. Cooking time is not exact, just try the beans for tenderness to tell when it’s done.
Notes: You can play with the amount of seasoning to add. Good with cornbread and rice, with the cornbread mushed into the beans and rice if you're my husband. This makes a TON of food for very little money, especially if you leave out the sausage.

1 package marinating steak, cubed
1 package carrots, diced thin
2-3 potatoes, cubed small
1 package brown gravy mix
1 can beef broth
1 onion
garlic salt
How much of each you use depends on the size of your Crock Pot and how health conscious you are. As long as the liquid level is just above the carrots and you add the gravy mix, you can do whatever you want and it will be good. Place cubed meat in bottom of Crock Pot. Sprinkle with garlic salt. Mix broth and gravy mix and pour over. Add potatoes next, then carrots. Fill with water to just above carrots. Quarter the onion and stick chunks of it around the top. It’s only there for flavor. Cook on low for 8-10 hours.
Notes: Very easy, can set up Crock Pot situation the night before and keep in fridge until morning.

1/4 cup sugar
3/4 cup orange marmalade
1 can whole cranberry sauce
1 (2 to 2/1/2- pound) frozen turkey roll, thawed (these are always frozen at my store – it’s basically a chunk of boneless turkey meat)
Slice thawed turkey into thirds so flavors can get in to all of it and put in Crock Pot. Mix other ingredients and pour over. Cook on low 8-10 hours. Good with mashed potatoes.
Makes 6 servings.
Notes: Good in a different way – didn’t add any savory flavors like garlic to the side of mashed potatoes.
StacC 10-07-2006, 11:49 AM I got a PM asking about the rice in the Cajun beans and rice - I just make white rice and use as a bed for the beans (people like more or less rice/more or less bean liquid, etc. - same with gumbo). I usually just make a box of Jiffy cornbread in an 8 x 8 pyrex dish and crumble it on top of individual bowls. Also, I often taste it at the end and find it needs more salt than what I added to begin with. You can make fresh rice every night you have the beans, but if you have extra rice I would mix it up with beans and some of the juice before storing in the fridge... keeps it from getting dry.

Roast
1 can coke
1 can Cream of Mushroom Soup
1 pkg onion soup mix
1 roast
Place in crockpot on low for 8 hours. Can also add carrots and potatoes if desired. The broth can be used for a delicious gravy base.
Italian Chicken and Potatoes
4 boneless, skinless chicken breasts
1 C Italian salad dressing
2 tsp Italian seasoning
1 C grated Parmesan cheese
Potatoes cut into wedges
Place chicken in bottom of slowcooker. Sprinkle with half the Italian dressing, spices and cheese, Put potatoes on top or around chicken. Sprinkle with remaining dressing, spices and cheese.
Cook on low 6-8 hours.

kimbersmom 11-27-2006, 01:34 PM Just had to brag- I made my T'giving turkey in the crockpot and it came out GREAT! There were only 4 of us eating turkey, so I just made a 5 lb breast. I bought a Butterball turkey, put the gravy that came with it in the bottom of the pot, added a little chicken broth to it, rubbed garlic pepper on the breast, and cooked it for 8 hours. The resulting turkey was fall-off-the-bone moist, and after thickening it with some flour, the gravy was wonderful. And it took me all of FOUR minutes to put it together. =)

Ingredients:
Boneless/skinless chicken breasts
Favorite brand Salsa
Medium onion chopped
Curry powder to taste
Sour cream to taste
Place boneless chicken breats in crockpot, bury in your favorite prepared Salsa with chopped onion, add curry powder. I cook on low for at least 4-5 hours. When done I remove the chicken carefully and stir in a couple of dollops of sour cream to alter the appearance and increase the cream taste of the sauce. I plate the chicken and pour the sauce over the top.
I do this basic sauce for shrimp curry as well, however for that I cook the shrimp quickly by sauteing over heat with olive oil and garlic, then prepare the curry on the stove top and add the shrimp when done. Total time 10-15 minutes.
Serve either over white rice, or egg noodles. Sorry about not have quantities as I tend to cook by eye and taste, knowing how many I'm serving

1 Can of Castleberry BBQ Pork
1 Can of Castleberry BBQ Beef
1 Large can of Chicken White Meat chunks (drain)
1 Can of Niblets Corn (drained)
1 Can of Creamed Corn
1/2 Cup of BBQ Sauce
1 Large Can of crushed tomatoes
1 TBLS of Vinegar
1 TBLS of Liquid Smoke
(Chopped Onions are an option)
Pour all in the crock pot and mix well. Cook on low for 4 to 6 hours.
I made this while we were camping and it was great. My brother smoked a pork tenderloin and it went well together.

2 28-oz. cans baked beans, undrained
8 bone-in pork chops (trim off the fat) or 4 thick-cut boneless loin chops, cut in half crosswise (I just use what comes packaged in the meat department and plop it in)
1/2 cup brown sugar
1 cup Coca-Cola
1 cup bottled barbeque sauce of your choicePlace the beans in the slow cooker. Place pork chops on top of beans. Sprinkle pork chops with brown sugar.
Mix Coca-Cola and barbeque sauce. Pour over pork chops.
Cook 8 hours on low or 4 hours on high.
Serve this with cornbread and a salad, and it's such a good dinner! Enjoy!

6-8 medium sized baking apples, cored
2 Tbsp. raisins
1/2 cup sugar
1 tsp. cinnamon
1 Tbsp. butter
1/2 cup water
Remove top inch of peel from each apple. Mix together raisins and sugar. Spoon into center of apples. Sprinkle with additional sugar and dot with butter. Place apples in crockpot. Add water. Cover and cook on low 7-9 hours or on high for 2 1/2 - 3 1/2 hours.
Corn on the Cob
6-8 ears of corn (in husk)
1/2 cup water
Remove silk from corn, as much as possible, but leave husks on. Cut off ends of corn so ears can stand in cooker. Add water. Cook on low for 2-3 hours.
Egg and Cheese Bake
3 cups toated bread cuges
1 1/2 cups shredded cheese
Fried, crumpled bacon or ham chunks (optional)
6 eggs, beaten
3 cups milk
3/4 tsp. salt
1/2 tsp. pepper
Combine bread cubes, cheese and meat in greased crockpot. Mix together eggs, milk, salt and pepper. Pour over bread. Cook on low 4-6 hours.

1 pkg cream cheese
2-3 cans cream of chicken soup
4 chicken breasts, cut into chunks
1 pkg Italian dressing
water
2. Mix all in crockpot, add water until desired consistency. Cook on HIGH about 2 hours.
Serve Over Mashed Potatoes.

2 pounds of stew beef or beef tips, cut into cubes
1 envelope onion soup mix
1 can cream of celery soup
1 can cream of mushroom soup
2 cups of sour cream - HOLD until last 10 minutes of cooking
Cook low 6-8 hours. 10 minutes before you are ready to serve (usually while I am cooking my egg noodles or minute rice), stir in 2 cups of sour cream & turn crockpot on high. This really thickens the sauce.
I made this last week and it was DA BOMB!! I doubled the meat and I will probably throw in mushrooms next time because I love mushrooms, but this is seriously the best crockpot dish I have made! Thank you!

Put about 1/2 of the small box of instant brown rice in bottom
Add one stick of cream cheese
One large can of Cream of Mushrrom soup
Mix that all together
Add in about 4 or so chicken breasts.
(make sure they are covered up completely by the mixture)
I sprinkle some pepper on the top.
Cook on low for a few hours till done.
The rice and the soup mix up nicely for the side dish.
It is yyuuuummmyyyyy!!!!!!

Beef Burgundy
1lb of stew meat
1 can of Campbell's Golden Mushroom soup
1 med size onion cut up..not diced
Red Wine
salt/pepper
egg noodles or rice
Place meat, can of soup, onion in crock pot. Add salt and pepper to taste. Pour 1/2 can of red wine (use can from soup to measure) over top. Cook on high.
Once cooked served over egg noodles or rice.
If you do this in the oven you cook on 375 for about 1 1/2 hrs. I just left it in the crock pot on high while I work so not sure of the exact time.

Creamy Sundried Tomatoes Alfredo Chicken.
6 boneless chicken breasts
12 Sundried tomatoes (not the oil packed ones)
2 jars of Classico Sundried Tomatoe Alfedo
1 cup whipping Cream.
1 package of Linguini .
Parmesan to serve
Brown the chicken on both sides.
While chicken is browning, line the bottom of the crock pot with 6 of the sundried tomatoes.
Once the chicken is brown, transfer to the crock pot. Top with remaining sundried tomatoes and then pour the Alfred sauce on top of the. Pour the whipping cream in in each jar and shake to get the remaining sauce off the jar and then pour over chicken.
Turn slow cooker on low and cook for 8-10 hours.
Cook your noodles according to package directions (don't rinse the pasta) and serve with chicken and sauce. Top with Parmesan cheese and enjoy./:thumb4:

Put roast in crockpot. Mix soups together in another bowl. Pour on top of the roast and cover.
Cook on low about 6-8 hours (until roast is cooked through).
YUMMY!!!!
I served mine with mashed potatoes. The next time I make this, I am going to try adding baby carrots and peeled, quartered potatoes in the crockpot along with the roast.

Beef Burgundy
1lb of stew meat
1 can of Campbell's Golden Mushroom soup
1 med size onion cut up..not diced
Red Wine
salt/pepper
egg noodles or rice
Place meat, can of soup, onion in crock pot. Add salt and pepper to taste. Pour 1/2 can of red wine (use can from soup to measure) over top. Cook on high.
Once cooked served over egg noodles or rice.
If you do this in the oven you cook on 375 for about 1 1/2 hrs. I just left it in the crock pot on high while I work so not sure of the exact time.
I make this one on a regular basis and it is easy and good! I cook mine for about 8 hours (usually overnight) in the crock pot on med/high.
Crock Pot Dressing
2 cans of Chicken Broth
2 can of Cream of Chicken
4 eggs
1 cup of diced onions
2 tbl sp of Sage (more of less to taste.
Dash of salt
dash of pepper
1 Skillet of Cornbread
8 slices of day old bread or biscuits
I cook my cornbread the night before but you can cook the same day.
Add all the ingriediants to the crockpot except for the bread. make sure it is all stirred together good. Crumble the bred until you get the desired thickeness.
Turn on high for 2-3 hours. If it is not dry enough cook longer, if it is to dry you can add a little more chicken broth!!

Thanks so much for sharing your favorites. The rest of the work week will be slow so I'll be taking notes/recipes from here to try very soon. One quick question....do you all have NEW crockpots? Mine is like 20 years old -- still works -- but was just thinking maybe I should invest in one of the newer models.:confused:

Christen99 01-03-2008, 06:41 PM My crockpot and I became friends the first year my ds played baseball! I usually pick a meat (in my case chicken because I don't like meat very much) and a sauce and toss them in the crockpot together. Sometimes I dump salsa in with some chicken breasts and we have burritos, or sometimes it's a container of BBQ sauce with chicken and we end up having BBQ chicken sandwiches. I have also used frozen meatballs and marinara sauce and then we make meatball sandwiches. My current favorite are the Indian sauces from Trader Joes with chicken, then I make some rice and steamed veggies.
Well my crockpot is 10 yrs old and does just fine ;)

I need to spend some serious time and go through this thread - I love my crockpot! Here's one of my favorites and sooo easy.
bone in or out pork chops - I typically do 4 because it's just DH, me and our pup
olive oil - about a 1/2 cup or so, I usually eye it
chicken broth - mix with the oil and just make sure there's enough to cover the chops
Now comes the fun part - the spices! I usually just eye it and do it to taste, so I don't really have a specific measurement to use, if you're not good at just "guessing" I'd say start with anywhere from a teaspoon to a Tablespoon of each depending on your like/dislike and how much meat you have.
garlic - to taste, I like a lot!
onion powder
oregano
basil
McCormick Montreal Steak Seasoning - yes, specifically that one. I've tried it with others and this one gives the best flavor.
Cook on Low for 8-10 hours.

Smackbelly&ThePone 11-01-2008, 11:42 AM I love sauerkraut. Get a couple jars of it, stick it in the crock pot with sliced up hot dogs or kielbasa or both and turn it on low. Very yummy and easy.
