I need something to make for dinner... who has a great idea/recipe?

And I have to shop anyway so i can pick up ingredients..... the stuffed pepper idea sounds good.... maybe with meatloaf... mmmm:D

mmmm... I am thinking meatloaf with stuffed peppers for dinner....

do you use white rice in the peppers or something like red beans and rice?

I use brown rice, usually but the white is OK too.

If you like chicken, this one is easy and good. We have it often so I may have posted it before.

1 pkg boneless, skinless chicken breasts
1 pkg dry italian seasoning (like Good Seasons, etc.)
1/2 c butter or margarine, melted
1/3 c lime juice (you can use fresh or concentrate)
mozzarella cheese

Place chicken in a baking pan, pour lime juice then butter over them. Sprinkle the italian seasoning evenly over them, cover, and bake at 350 degrees for 1 hour. Remove from oven, sprinkle with mozzarella cheese and place back in oven uncovered for approx 10 minutes or until cheese is melted. Serve with rice or pasta.

Even my picky eater Morgan likes this one! :)

hmmm we dont really do meatloaf over inn the uk but i tried to make it the other day and it turned out a bit stodgy - not at all like the pictures ive seen!

Is Stodgy like soggy (wet?) if so, use more bread crumbs or parmesan cheese...:D

Chicken Picatta
1 small yellow onion, peeled and choped
2 cloves garlic, crushed
4 green onions, chopped
8 chicken breasts, boneless, skinless
2 Tbsp. olive oil
1/2 cup flour
salt and pepper to taste
2 Tbsp. butter
2 Tbsp. dry sherry
2 Tbsp. fresh lemon juice
1 Tbsp. capers, chopped
2 Tbsp. chicken stock
8 thin lemon slices
2 Tbsp. chopped parsley

Saute the yellow onion, garlic and green onions in the olive oil just til tender. Remove from teh pan and set aside.

Pound the chicken breasts flat with a meat pounder in two pieces of wax paper. Mix flour, salt and pepper together and place in flat bowl. Dip the chicken slices into the flour mixture. Lightly brown chicken slices in butter, 2-3 minutes per side. Add the sauteed onions and garlic. Over high heat, add the sherry, lemon juice and capers. This should thicken to make a nice gravy for the chicken; if the gravy becomes too thick, add a bit of chicken stock. Garnish with thin slices of lemon and the chopped parsley. Serve with rice and salad.
