Do you think that having dogs eat a varied diet leaves them less susceptible to things like upset stomachs? My girls seem to be able to eat anything without getting sick (well ok, except live maggots LOL) but I continually read about dogs with upset stomachs and food intolerance. I wonder if them eating a very varied diet has anything to do with this?
Any opinions?

You can probably guess my opinion ;) But I think the freshness of the food is as key as the variety of what they get.
Drum had nearly constant stomach or intestinal distress on kibble (and we have tried about 10 different brands over the past 5 years with him). Whether it was his squelching stomach, or diarrhea, or lack of appetite, it was always something.
Now that they get consistent variety of fresh foods, we have consistently small firm poops, no squelching tummy, and ecstatic appetite :D

So, are you saying dead maggots are OK? LOL! Kind of like grubs I guess - good stuff if they don't tickle your innards!
I don't count the trials and tribulations of puppies, but I have never had a case of loose stools in any of my adult dogs, going back 20 odd years. We do rotate the kibble and the dogs get some of whatever is in season in the garden, but this was not always so - I remember when my old girl was over 15 years old, the food she had eaten all her life was discontinued! Horrors! I ended up having to switch her "cold turkey" to a new food. She didn't miss a beat
