What to do w/your garden tomatoes??....

Here's a quick & easy recipe:
You need:
about 3 lbs of coarsely chopped tomatoes (about 7c)...& remember that some tomatoes are better for chopping than others & also the direction in which you chop is important, too.
2 cups of sugar (I add a wee bit of brown, too)
1 cup of chopped green pepper
1 small can of chilies (mild)
chopped onion to taste...don't add it if you don't want
1/2 cup of lime juice
1tsp. grated lime peel
1tsp. ground cumin
1 tsp. or so of salt
1/8tsp. cayenne (use less if you wish)
*another option is jalapenos...it really depends on your taste but this is just as good w/o.

Combine your ingredients in a large saucepan & bring to a boil. Reduce heat to medium & simmer. Stir often until the tomatoes appear to be cooked through. Remove from heat & cool completely. Spoon into jars & refrigerate for up to 2 months!
