I'm going to do stuffed flank steak for DH's b-day on Sunday. I'm planning on doing fresh spinach (if I can still find some local grown), roasted red pepper and fresh mozz. However I'm open to any other creative recipes if you've got one!

I don't have a recipe but our grocery store makes them and they are delicious.
I think they put spinach and feta cheese.
