I know the theory behind boiling an egg. They just always end up mushy in the center or all gray and yucky looking. I've tried starting the eggs in cold water, bringing to a boil and timing. I've tried boiling the water, then putting the egg in. I've run them under cold water, I've let them cool in the hot water off the stove... Thank goodness I have so many extra eggs to try on!

I really think part of the problem is the eggs I use (we get "chex" which have imperfections in the shells, some have pinholes, some have lumps and bumps). I don't remember ever having egg boiling problems prior to starting work at an egg farm. Or maybe it's that I have moved into accounting & the numbers have all turned my brain to mush...

It sure seems like the imperfections cause an imperfect boiled egg. Weird though.

We had pork chops breaded and baked in white wine and asparagus a la Kristen! Asparagus blanched quickly, then wrapped in proscuitto and provolone cheese into bundles. Then i drizzle them with EVOO and sprinkle with bread crumbs and bake. Dinner served! Yummy
