When doing business, it is most important to get the money dealt with quickly and efficiently.
I would say something to him like, "I enjoyed pet-sitting for you and really appreciate you introducing me to other people. Here is your invoice. I didn't give you an invoice before as we discussed pre-paying, but I haven't received the money yet - probably just an oversight."

I would be upset if my dog sitter/walker felt she couldn't approach me about this situation but I don't work for/with her either! I always pay mine in advance, remember her on her birthday and at Christmas, I want her to know how much I appreciate everything she does for my 2. It honestly sounds like an oversight, just be honest with him.
