I've been disappointing by dog walkers as well. One was having major issues with Penny jumping on her (Penny could be intense - i guess she really liked her!) which was sorta lame cuz - dude you are a dog walker and your boss is a trainer :P Getting a dog in can be awkward the first time but after that i'd sadly keep a long line on them so they can't keep away (assuming using only high valu food didn't work).
regarless, best of luck on his recovery. i guess since it's not a bone cut the recovery isn't super long? i guess he will need to slowly build muscle and toning after having rested?
