Did you do a hot water bath, or are they a refrigerator pickle? I’m not to sure about refrigerator pickles, might depend on the recipe. I think typically for hot water bath they can have a shelf life of two years. After that it may still be safe to eat, but you may find the quality has changed eg. softer texture, colour change, flavour profile may have changed (and that may not be a bad thing,depending on your tastes).

We pickle small red beets and keep them in the fridge for about 2 years and they still taste fine, so I imagine your peppers and carrots should be fine.

Thanks everyone they were given the bath and there is lots of vinegar in the mix so I imagine they will be fine. The carrots weren't my thing but they make a good garnish for Vodka Caesars.
