Tortilla Soup Recipe | Blendtec
You know I bought the blender for Oban's raw food and now he can't eat it. But it came with it's own recipe book and this is my favourite people recipe in the book. Tops the ice cream recipes. :)
I use a can of low sodium chicken broth (or my own home made broth) and make up the rest of the liquid with 1% milk. At the end I pulse in a bit of frozen corn, black beans and tortilla chips. It's a very forgiving recipe, tastes great no matter what I happen to be out of or have to substitute. Fresh coriander is expensive so I put in some ground from the spice jar, which is a completely different taste but still good.
One avocado is good for four batches so I just made four. I'll freeze most, I never have before so we'll see how it tastes after it's been frozen
Ingredients
2 Roma tomatoes, quartered
1⁄2 large carrot
1 slice red pepper, approximately ⅓ cup
1⁄4 avocado
2 tbsp onion (a big wedge of red onion gives zip)
1 chunk pepper jack cheese
2 sprigs fresh cilantro
1 tsp no-salt herb seasoning
3⁄4 tsp kosher salt
3⁄4 tsp garlic powder
2 cups warm water (I use a can of chicken broth and enough milk to make up 2 cups)
1⁄2 cup tortilla chips
1/4 cup frozen corn ( we like less corn)
1/4 cup black beans, drained and rinsed (I put in more like 1/2 cup)

INSTRUCTIONS
- Add all ingredients but tortilla chips, corn and black beans to FourSide or WildSide+ jar in order listed and secure lid.
- Select "Soup" or "Hot" or "90" cycle (might want to run cycle twice for desired heat) or blend on a high speed for 90-180 seconds.
- Add tortilla chips, corn and black beans secure lid, and press "Pulse" 2–3 times.
