    cooking turkey in a paper bag

    Anybody?
    Had an early Thanksgiving today and remembered I hadn't done turkey that way in many years, so.........,
    comes out great if you've never tried it.

    Had never heard of that method. There's a bakery around here that does apple pies in a paper bag; they are huge and delicious.

    The term "En Papillote" means cooked in parchment, such as a paper bag. Our owners other restaurant does a fish dish this way, and it's delicious.

    I had to look that one up as well. The following recipe says you're roasting at 375 degrees but that paper doesn't ignite until 451 degrees. Plus, this recipe says to sprinkle the paper bag with water before putting the whole thing in the oven. However, one of the reviewers on this site suggested that cooking in a paper bag is not really safe, that the bags weren't meant to be used for cooking.     Well, I can only vouch for the last 38 years, not sure if anyone died before that. Never heard of sprinkling water on the bag, you butter it, some use shortening, and no the bag will not start on fire, do a goggle search, you'll find different recipes but the basics will be the same.

    We used to cook bacon and eggs in paper bags over a campfire back in my Girl scout days, too. I had forgotten about that and I lived to tell the tale!

    The skin doesn't look crispy, like I look forward to. I like the idea of making a bag out of parchment, since we know that is food grade. Might be worth trying first with a nice roasting chicken.

    Not sure what you're looking at, but it comes out very brown and crispy.
