    Baking Hint

Love baking - cakes, breads, cookies, you name it. One part of baking I don't like is cutting butter into flour. Have a hand cutting in tool (don't have a food processer; don't know why, just never got one). Even with the butter ice cold, cutting in by hand is a big mess.

Saw a hint on The Chew and it works great. Using a grater and very cold butter, grate it, like you would a carrot. It's quick, easy, much less messy and cuts the butter up perfectly. Just toss with your fingers in whatever flour mixture you're working with. I have an older style four-sided metal grater. Cleanup starts with running under hot water and then soapy water. Running a fingernail brush over the grates gets all the nooks and crannies.

Today making cranberry orange scones this morning.

I do have a food processor, it must be 40 years old now. It works really well to blend cold lard with flour when making pie crust. I add the cold water in by hand though. But that's a good tip, to use the grater. I just bought a new four sided grater. When one day the old one (even older than 40 years) would not grate a lime I realized it was time for a new one. Boy oh boy, I've been needing a new one for a long time, longer than I knew. Now I don't have to angle the lime or cheese or whatever to the less used sides of the grater, something that still didn't work for said lime.

I'm on the computer just now looking up a pizza recipe. My Blentec blender (bought for Oban's raw food) has a pizza crust recipe I tried a week ago and it was really good. To my surprise, after the dough had been let sit to rise, it came out of the blender very easily. I've never made any kind of pizza dough from scratch before.

Grating for lemon/orange/lime rind is not my favorite thing. Always did it on my box grater and always snagged a finger or finger nail. Just bought a microplane-type tool and I'm in heaven. It does a beautiful job getting just the rind, no finger nicks, easy to clean. Found it at Target, stainless steel.

I love my microplane. Bought a new potato peeler and I love how sharp it is. I love kitchen gadgets and can spend hours browsing Sur La Table or any kitchen store. Speaking of The Chew, I finally got to Michael Simon' BBQ restaurant "Mabels's" and that man knows his was around some bar-b-que!!!!!

Microplanes are awesome kitchen tools. I use it for Parmesan cheese right over my bowl of pasta.
