Nothing fancy. American cheese and some butter on the bread. Bread choice now is usually some multi-grain. Sometimes I'll step it up with Swiss cheese.
There is a new restaurant that specializes in grilled cheese, various breads, various cheeses other toppings along with a variety of tomato soups. When I tried it I got my plain grill cheese and a pretty basic tomato soup because none of the fancy versions appeal to me.

Sourdough bread should always be used.
Combinations we love: Mozzarella, tomato and avocado; sharp cheddar; sharp cheddar and homemade onion, bacon and tomato jam; smoked gouda and turkey (technically with meat it is considered a melt)

I do one with fresh Italian bread from a local bakery, a 4 cheese blend Italian sliced cheese. Butter the outside of the bread, sprinkle some roasted garlic salt, oregano, and grated parm on the outside and grill. Basically garlic bread grilled cheese!
