      Nanaimo Bars

      Nanaimo Bars

      Base:
      1 1/2 cups rolled oats
      1 1/2 cups graham wafer crumbs
      1/2 cup coconut
      1/2 cup slice almonds
      3/4 cup butter or margarine
      1/2 cup sugar
      1/4 cup cocoa
      1/2 tsp. vanilla
      1 egg

      Combine oats, graham crumbs, coconut and almonds. Mix well. Combine butter, sugar, cocoa and vanilla in small saucepan. Cook stirring until until smoothly blended. Pour small amount of hot chocolate mixture into egg and whisk. Blend into mixture in the saucepan. cook 2 minutes longer over medium heat. Pour over oat mixture. Press into 9 square pan. Chill.

      Filling:
      Plain
      1/4 cup butter, or margarine
      2 tbsp. custard powder
      2 cups icing sugar
      3 tbsp. milk

      or

      Peanut Butter Filling
      1/2 cup peanut butter
      2 tbsp. butter, or maragarine (softened)
      1/4 cup custard powder
      6 tbsp. milk
      2 1/2 cups icing sugar

      Beat either filling mixture ingredients together until smooth. Spread over chilled base.

      Icing
      1/4 cup butter, or margarine
      1/4 cup cocoa
      2 tbsp. milk
      1/4 tsp. vanilla
      1 1/2 cups icing sugar

      Heat cocoa and butter. Add milk and remove from heat. Add vanilla and icing sugar. Spread over filling and chill.

      It looks like a really yummy although somewhat decadent dessert. Thanks for sharing the recipe.

      I have 2 questions about ingredients that just don't seem to appear on recipes in the U.S.

      "custard powder" - Is that the same as cornstarch?

      "icing sugar" - Is that what I might call powdered sugar?

      Custard Powder - look for an import market. Indian Grocery store may carry it as well. Amazon has it as well you can order. Or see below for substitute.

      The custard powder I use is "Bird's Custard Powder", original flavour. Made by Kraft. Maybe only available in Canada?

      The ingredients are: corn starch, salt, colour (tartrazine), artificial flavour.

      Custard Powder Substitute


      Just looked it up, powdered and icing sugar are the same.

      Thanks to both of you for the links. At least I was halfway accurate in my guessing. I do a lot of cooking but can't say I remember seeing custard powder in the store. But I love a challenge and Portland has many specialty markets so perhaps I'll find it. I'd like to try the recipe with the actual ingredients called for.
