    Roasted Cauliflower

    1 head cauliflower
    4 tbsp olive oil
    2 lemons, juiced
    1 tbsp granulated garlic, or garlic powder
    2 tsp salt
    1 tsp crushed red pepper (if desired)

    1. preheat oven to 400F.
    2. chop cauliflower into bite sized (roughly 1 inch square) pieces and place in bowl.
    3. thoroughly mix olive oil and lemon juice, then drizzle onto cauliflower.
    4. sprinkle in garlic powder, salt, and red pepper.
    5. mix thoroughly, ensuring all pieces are coated.
    6. spread onto baking sheet, preferably leaving space between each piece.
    7. Put in oven and bake until lightly browned. Check at about 15 minutes, probably needs about 20 minutes.

    NOTE: This also works well for broccoli. It needs about 5 minutes less time.

    This recipe is a winner. It also works with Brussel sprouts.

    Think I will try that tonight. I have cauliflower and broccoli left over from making veggie dip on the weekend.
