Thank you, I found similar articles and headed out to buy some gf flours to mix. Then I discovered I could buy a pre-mix. Probably not the most economical but I did buy some pre-mix, so we'll see how it goes. My sister was eating gf years ago and a lot of the things we made with her in mind were not very good. She got over it, maybe not true gluten intolerant, though her stomach said she was. It was nice when she could eat anything but now my nephew's wife is newly gluten intolerant so here we go again.
Would still like to hear of any first hand reports from those with gluten intolerance.

Well, in case it helps anyone else, I bought Compliments GF flour and subbed it into two of my usual CHristmas baking recipes. A date square type thing and a chocolate shortbread. They were well received but I did not think as good as with regular flour. I think next time I'll look for GF recipes from a GF flour company.
