That sounds great! I like that the strawberries are baked in instead of topping afterward which is a total mess. I'll bet it's really moist.
I use this recipe for either a dessert,or a morning coffee cake.
ingredients:
1 cup flour
1/2 cup sugar
2 tsp.baking powder
1/2 tsp.salt
1/2 cup milk
1 egg
2 tbsp. melted butter or margarine
1 1/2 cup strawberries(enough to cover cake)
Topper:
combine 1/2 cup flour, 1/2 cup sugar. Cut in 1/4 cup margarine until mixture resembles course crumbs.
You can add 1/4 cup walnuts if desired.
Instructions:
Sift together dry ingredients. Add milk, egg, and margarine. Beat 2 minutes, by hand or mixer.Turn into a greased 8x8x2inch pan. Top with sliced berries(I slice the berries and arrange them on top of the cake 1 slice at a time)Sprinkle with the topper. Bake in moderate oven at 375 degrees for about 35 minutes.
