Need to try this recipe. Next year I'd like to grow fennel.
I will post a picture the next time I make it, but I made this fennel salad on the weekend and it was a huge huge hit.
1 bulb fennel
1/8 cup olive oil
1/2 teaspoon mustard
2 tablespoons lemon juice
1/2 teaspoon salt
1 tablespoon jam
1 sprig of fresh mint, coarsely chopped
cut fennel bulb in half long ways, then very finely slice each half of the fennel bulb, discarding the shoots at the top
mix the other ingredients together well and pour over sliced fennel, toss and enjoy
Best if left in the fridge for 1 hour or more before serving.
This is the original recipe but I changed it a little as I would rather use jam to sweeten up something rather than sugar. My kids won't eat shallots or onions so I left those out too. 1/4 cup of oil was too much so next time I will use 1/8 of a cup.

It was yummy, and what I really liked most was it is crisp. I don't like nuts or fruit in my salads, but the jam didn't make it fruity, just added sweetness. I actually found it a bit too sweet for my liking, I will use 1 teaspoon of jam next time.
That looks interesting. Fennel isn't easy to find in stores here, I may have to try growing it too. I don't know why your link says Forbidden, it came up for me.
