Curry chicken - A quick and easy knockoff of a marinated chicken breast my local market sells.
Flatten a boneless skinless chicken breast so it is even and about 1/2 inch thick (butterfly and/or pound as necessary). Rub chicken with sweet curry (I use Penzy's) on both sides. Sauté in small amount of olive oil on first side until about 1/2 way cooked. Flip over and top cooked side with diced green onions. Cook until chicken is done (do not flip over again). Onions will soften up and impart their flavor into the chicken while the second side cooks.
