    I'll echo Bamps. My recipe subs lime juice for vinegar, adds finely chopped chipotle.

    Ceviche! Fresh white fish (think, say, pickerel), chopped tomato, diced jalapeno (or not if you prefer), just a bit of diced onion, just a bit garlic, of chopped ciilantro, all 'cooked' in lime juice/refrigerated for several hours. Some people find this revolting; it's a good hot day treat.

    Bacon and fried tomato sandwiches are really good, or when you make grilled cheese, add a slice of tomato.
    You can make a stir fry of veggies and add cubed tomatoes.
    Cut up and put on pizza.
    Puree and freeze in a bag for pasta sauce.
    Mediterranean salad - purple or Spanish onions, bell peppers, tomatoes and an oil and Balsamic dressing.
    Stuff trout with cubed tomatoes and mushrooms.

    I wish we had such plentiful tomatoes!

    I chunk them up and freeze them to use all winter in soup, sauce or chili. I also love to make bruschetta when I have a lot of tomatoes. I use a little olive oil, cracked black pepper, red onion, garlic and balsamic vinegar.
    What about pico de gallo? Fresh pico is good on lots of things.

    I'm putting our tomatoes into the freezer with the core taken out and cut in quarters. Once I'm done working the crazy hours at the tomato canners, I plan to make sauce and can it. I think we need to consider a larger freezer in the future, it's stuffed to the gills!

    My grandmother used to can huge amounts of tomato sauce. We also found quart size freezer bags to be perfect sized for a meal for 4.

    My dad brings his excess garden stuff to local churches rhat run soup kitchens and or food pantries. A senior center also might be very happy for the gift. If you go this way try to find a recipient who knows you so they dont discard for fear of bad things.
