    Potato soup recipe anyone?

    I want to get a potato soup recipe that is fairly simple, quick, and tasty! Anybody know where I can get such a recipe?

    Potato soup's been my all-time favorite since I was a kid. Checked for a good recipe on the Net, but most of them are a bit off in one way or another, so I ended up using a traditional cookbook
    Potato soup
    3 large potatoes
    3 pints water
    root vegetables (carrots, parsley root, celery root)
    1 onion
    fresh or dried mushrooms (dried ones are better, more flavorful, but must be soaked in water about 1 hour before cooking)
    2 1/4 oz butter, salt, marjoram, caraway seed, garlic and chopped parsley

    Sauté finely chopped root vegetables, onion and mushrooms in butter, sprinkle with flour, add part of water and mix well. Add rest of water, diced potatoes and caraway seed. Salt to taste and cook till tender. When finished add marjoram, crushed garlic and chopped parsley.

    It's not difficult to make, doesn't take ages, and tastes really good.

    Years ago DD fell on her face, with braces on her teeth. What a mess; she was in such pain. Made her lots of potato soup. Boiled cubed potatoes like for mashed. Drained and mashed. Added half/half (she needed the calories), butter, sautéed onions and celery, parsley flakes, salt, pepper, a little garlic powder. It's become a favorite here though it took DD a while to want it as she lived on it for quite a while. Later, when she healed, would hold out some of the potatoes to cut into small cubes to give the soup a little more texture.

    I make a mean loaded baked potato soup in the crock pot. I'll sent over the recipe when I have time.

    ny times cookbook used to have a leek and potato soup that was to die for. bet you can google it.

    now to choose one....hmmmm.......thanks everyone! Now I can't wait to make it, I love potato soup now excited to make it myself :-)
