I have a bunch of tomatoes to use up. They just all ripened at the same time! I also have a ton of those really sweet orange cherry tomatoes and honestly, I cannot eat one more! I've been eating them for months and have had it. However, I don't want to waste them. I'm making some freezer pasta sauce tonight and am wondering if I can add the cherry tomatoes? The sauce calls for sugar, so I could leave that out and add these sweet little things instead. That would work, right?

While this doesn't directly answer your question, here's something we do with a surplus of cherry tomatoes:
Roasted Cherry Tomato Pasta Sauce
4 cups cherry tomatoes, halved
4 cloves garlic, sliced
3 tbsp olive oil
1 tbsp balsamic vinegar
2 tsp minced fresh rosemary
1/2 tsp salt
(optional) pinch red pepper flakes
Preheat oven to 400.
Combine all ingredients in a 13" x 9" baking dish and toss to mix. Roast until tomatoes shrivel, about 25 minutes. Remove from oven. Ladle over freshly cooked pasta.
Also freezes well. This recipe can easily be halved or doubled. If doubled, add more roasting time.
