    I'm smoking a brisket tomorrow. Was afraid I'd waited too long to order it from our butcher. It's an 8+ lb. flat. I'll rub it tonight and plan to get started early-ish tomorrow morning partly because of the size, partly because thunderstorms are forecast late afternoon into the evening. We'll get fresh corn from a local farm, add some potatoes, and grill peaches for dessert.

    Can I come to dinner? Sounds delicious! DH is smoking ribs today. I haven't figured out the rest of the menu but my daughter always, always wants homemade mac and cheese.

    The brisket hit the stall about 90 minutes ago. Seems to be through, its temperature is climbing through the 160s.

    The fruits (actually, meats) of yesterday's smoking session. Ham hocks to be used in future soups, and brisket. Didn't include the beef side ribs. I grilled the popper, along with some small Roma tomatoes and roasted a red pepper from our garden which topped the Romaine salad. The jalapeno, tomato, poblano, and tomatillo are there for some colour. Dessert was peppermint-flavoured chocolate fudge crackle ice cream.

    We had a huge haul last year. Some went into our House Salsa. Faye also pickled a batch; we still have four jars because we wanted to use the previous years' production. They go with sandwiches, burgers, omelets, nachos, quesadillas and so on. We (OK she) used the hot water bath method. I'll get the recipe if you like.
