I eat this all of the time with variations. It's so good and inexpensive but it's also a full meal. I especially like Sapporo Ichiban noodles, original flavor. Use whatever additions appeal or you're willing to try but if you are using tofu, be sure to get that in right away so that it soaks up the flavor since it doesn't have any on its own.
1 package ramen noodles
1/3 package tofu, cut into cubes (optional)
handful fresh spinach
1 egg, cracked into a cup
green onions sliced thinly on the bias
chili flakes or sriracha to taste if you like spicy.
one sheet dried seaweed
Shred seaweed into a large soup cup or bowl. Boil water in a saucepan according to package instructions. Add noodles and seasoning from the package. Add tofu if using. Turn down heat to medium. Let boil for two minutes. Stir with fork to separate noodles slightly. Add chili flakes or sriracha if using. Slide the egg from the cup whole into the liquid and let simmer for another two minutes. Add spinach and onions and let simmer for another one minute until spinach is wilted. Pour into soup cup or bowl and let sit for another minute.
