I love anything made with apples so I'm definitely trying your version of apple crisp. Do you think it would work with Fuji apples? There are so many in the stores here right now.
I bake this apple crisp all of the time. It's great for apples that are out of season and getting soft. We live in apple country so figuring out what to do with them is pretty important. This recipe works beautifully. Don't rush the prep though. It takes a bit for the apples to absorb the lemon juice.
Cut everything in half if using an 8" x 8" Pyrex pan.
Approximately 9 apples (I like Cortlands) peeled, cored and sliced thin
2 tbsp fresh lemon juice
2 cups whole uncooked oatmeal
2 tbsp flour (omit if you want a gluten free recipe - the topping will just be a little crunchier and the sauce won't thicken as much)
1 cup packed brown sugar
2 tsp ground cinnamon
1 tsp kosher salt (less if using salted butter)
2/3 cup melted butter (preferably unsalted) plus whatever you need to grease the pan
1. Preheat oven to 350 degrees F. Butter a 9" x 13" Pyrex pan generously. You must use butter.
2. You want enough peeled, cored and sliced apples to fill 2/3 of a 9" x 13" pan.
3. Put the apples slices in a mixing bowl and sprinkle with the lemon juice while tossing the apple slices to get good coverage. Spread in the well greased pan.
4. Combine the dry ingredients in a mixing bowl with a fork while letting the apples sit in the lemon juice.
5. Drizzle the butter over the dry ingredients while mixing with a fork. Spread/sprinkle over apples.
6. Bake for 35 minutes or so until apples are tender and the liquid is bubbly.

I love apple crisp. I will sometimes make a double, or triple batch of topping and put it in the freezer to have ready whenever I want to make a quick apple crisp.

Don't like apple pie but love apple crisp. Gonna try this one on a Tuesday when the kids are coming over. Top with some ice cream, this is going to be GOOD.
