    Breakfast porridge: SCOs & Quinoa + stuff

    I've been eating this basic recipe for breakfast every morning for at least 6 - 8 years and slowly revising it.
    I LOVE it and will continue eating it (taking along frozen cooked portions when I travel away from home if
    it's a place I can't take my Zojirushi NP-HBC10, a 5.5 cup "Z" induction rice cooker.***)


    This works best in a Zojirushi set on "Porridge" since that cooks at various temps for an hour and then
    reverts to a "Keep Warm" setting. Those with any rice cooker and curiosity to experiment with breakfast
    porridge recipes might try it although, while it's okay, the end product isn't quite as good, IMO, as in a "Z"
    And while it could be cooked in microwaves or even on stoves, that would take a lot of work and timing
    to get a rough approximation; rice cookers take much less work and will be a little closer to a "Z's" multi-
    ple stages and result.

    I empty a bag of pre-mixed ingredients into my "Z" each night, add the water, choose the "porridge" cook-
    ing menu button (of 10 choices), and then start it cooking around 5 - 6 AM. It cooks at various stages for
    an hour, then goes into its "Keep Warm" stage until I eat it between 6:30 and 8 AM.)

    2 TBS Steel Cut Oats
    2 TBS Quinoa
    small sprinkle of salt
    1 tsp. Ceylon** Cinnamon powder
    [1 tsp. OptiFiber (optional)]
    small handful of dried Blueberries
    small handful of "Craisins"* (dried, sweetened Cranberries)
    7 oz. water
    Serve with skim or 1% milk plus slices of half a banana

    * "Craisins" -- a unique product of only "Ocean Spray" brand as far as I
    know. These add a subtle tartness which I enjoy far more than any other
    dried fruit I've tried (e.g., apricots, raisins, prunes, date pieces, etc.).

    ** Ceylon cinnamon is slightly more expensive than non-Ceylonese but it
    has a milder flavor and is far healthier. If you're very healthy and rarely eat
    cinnamon powder, it'd usually make no difference BUT IF you have potential
    liver problems OR eat cinnamon daily, it could make a huge difference in your
    health which kind you eat.

    While they're terribly expensive, prorated mine costs me less than 6c/day for
    my use.

    Sounds yummy. I wonder if the recipe would work in our mini slow cooker (we have enough kitchen items in our small space) We had been cooking a mixture of steel cut and regular oatmeal in it, but then I discovered I like eating uncooked large flake oatmeal with dried fruit (like raisins,cranberry or Apple), cocoa nibs, ground flax and walnuts with milk.

    A slow cooker might work -- I'd suggest maybe trying it overnight because my "Z" is much hotter and cooks about an hour. Or maybe first trying it during the day so you can sample it every hour to see when all the cereals are cooked sufficiently soft?

    I have a much smaller zoshirushi but the quantity you make sounds like the perfect quantity for one, I might even be able to double it. I'll have to give it a try. I've also found dried cranberries made by other companies, they just can't call them Craisins. I make my own granola using oats, nuts, dried fruit, maple syrup, etc. I'll probably stick to that for the summer with plain yogurt but when it starts getting colder again, your morning porridge sounds like a great alternative. Hmmm, wonder if I have all that stuff around so I could try it today? I think so, except for the dried blueberries which I would substitute with dried apricot anyway.

    hey Kleb-you try the slow cooker and let me know. sounds yummy, even without the dried fruit. i am an oatmeal lover and have been addicted to irish oatmeal for a long time (mc cann's) as a matter of fact, i want some NOW .

    I eat oatmeal every day, as a mid morning snack, and really prefer steel cut oats. I'm dealing with chronic pancreatitis and this is one rib-sticking, satisfying meal that causes no problems. Along with adding the fruit, I'm going to have to try your recipe. Thanks Bob Pr.

    My latest modification to my breakfast SCO & Quinoa & dried blueberries + Craisins recipe:

    After cooking and just before eating, add slices of a half (or whole) ripe banana over the top.

    DELICIOUS !!! STUPENDOUS !!!!
