With grilled veggies or elote. This heart health diet is rough but someone's gotta eat it. I just hope I don't gain weight from eating too much. Lol!!
And today, after I get back from cardiac rehab in town, we're heading up for a picnic.

Actually, you can do some awesome grilled chicken. I have a lot of fun with it.
I prefer bone in chicken breasts, skin on, just don't eat the skin.
Prep chicken breast, rub with olive oil, heart healthy oil. You don't need a lot. Then prepare a good rub. Also Cayenne peppers and red pepper is heart healthy and we know you like things hot. I also like Weber New Orleans seasoning with the peppers. Rub it in really good, let sit out on counter getting warm, keep an eye on Opie
Then get the grill ready for indirect heat. You want your grill about 400 degrees but you want a good spot with no heat under it. Easy on a gas grill. Mine has 3 burners, I put the 2 out the outside on high and one in center off.
Put the chicken bone side down and cook covered 35 minutes. Then turn all the burners on flip over skin side down, 5 minutes. I could almost eat this every singe day. I recommend 2 great books. Both have the same title, as one is the old one and one is the new one. Which they both have different recipes in there. Great Fish and Chicken recipes. Even grilled veggie recipes. Eating healthy doesn't have to taste bad.

Then Veggies, do them on the grill. I grill fresh broccoli and cauliflower and put some cheese on it not much cheese but enough. Hemi always gets a couple pieces, I am sure Opie would love some too.
I grill asparagus this is easy. Cut the ends off, rub on a little Olive oil and your good.
Did you know you can grill a salad? Get a heart of romaine, Cut it in half, and about 5 minutes on the grill face down. I do brush on a little olive oil, and then add some Italian seasoning. It caramelizes the sugars in the lettuce and I tell you what makes a interesting warm salad. Add some grilled bell peppers and grilled onions, maybe some grilled chicken breast and you got a good healthy meal. I top with Salsa.
Then want something really good. get some Zucchini. Quarter it length wise. Again add some olive oil, fresh ground pepper, Italian seasoning, Oregano, and rub it in. Put it on the grill at about 400 degrees one of the cut faces down. Grill 4 minute, turn to other face down, grill 4 minutes. Now flip green side down and push them all together so it looks like a big plank of veggies in there grill 3 minutes. Then sprinkle with Parmesan cheese, the shredded kind not the Kraft that come sin a can you put on spaghetti, real shredded kind. Grill until melted. Then enjoy.
Take some time getting used to an entirely different diet but after some time, it will come natural. I love grilled veggies.
