It could be all the exercise causing it too.
We take Lola to doggie daycare twice a week. Lola loves it and is always beside herself with excitement when we get there. The owners at the doggie daycare place love Lola and rave about how she minds and well she plays with other dogs. They call Lola the "social director."
The only problem that we've experienced, is that Lola's poops are usually soft and smelly in the evening after daycare. The next day, her stools are perfect. Lola is pretty submissive, so my only guess is that all of the play with other dogs and excitement during the day upsets her stomach a little (or she doesn't poop).

Soft and smelly only one evening a week wouldn't bother me. If Stella is happy to go back each week she can't be too intimidated, I think. But what do the staff say? Can you or a friend drop in unexpectedly? It could indeed be DoubleDip's idea as well.
I am surprised the dog doesnt get all the poop out of them at the daycare with all the fun/excitement going on.

I was thinking it may be the extra exercise. on heavi-er exercise days Pen poops more for sure (and often softer).
The only other thing would be they may be giving her treats or something and it's the extra food/whatnot.
