    Irish Soda Bread

    I posted this recipe and thought I'd post it again. I also found a recipe for Irish Tea Soda Bread that I made yesterday and it was fabulous. I bake my soda breads in a iron skillet.

    Irish Soda Bread

    Ingredients (measure precisely for baking bread)
    · 3 cups white all-purpose flour
    · 1 cups whole wheat flour
    · 4 tablespoons white sugar
    · 1 teaspoon baking soda
    · 1 tablespoon baking powder
    · 1/2 teaspoon salt
    · 1/2 cup margarine, softened

    · 1 ¼ cup buttermilk
    · 1 egg

    · 1/4 cup butter, melted
    · 1/4 cup buttermilk

    Directions
    1. Preheat oven to 375 degrees F. Lightly grease a large baking sheet.
    2. In a large bowl, mix together flour, sugar, baking soda, baking powder and salt
    4. Cut in ½ C margarine.
    3. Stir in 1 ¼ cup of buttermilk and egg. Stir until the milk and egg are mixed. Just barely mix the ingredients.
    4. Turn dough out onto a lightly floured surface and knead very slightly. Do not overwork the dough.
    5. Form dough into a round and place on prepared baking sheet. Use a sharp knife to cut an 'X' into the top of the loaf.
    6. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture.
    7. Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean

    Irish Tea Soda Bread

    Ingredients
    The Zest and juice of 1 Lemon
    1 cup of milk
    1 1/2 cup brewed Irish tea
    3 cups all purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 tablespoon sugar
    1/4 cup raisins

    Directions
    · Preheat oven to 400 degrees.
    · To the milk add the zest and juice of lemon, sugar and brewed tea. Set this aside.
    · Combine the flour soda and salt.
    By hand mix the liquid ingredients to the dry until a soft but not sticky dough forms adding more flour or milk as needed.
    · Add 1/4 cup of raisins.
    · Pat the dough into a round and cut a cross on it to let the fairies escape.
    · Bake about 30 minutes or until nicely browned and when tapped sounds hollow.
