    Green bean casserole help.

    So I thought that providing frozen French cut green beans for their Thanksgiving casserole would be a little healthier than other options but when I presented the possibility, the word canned kept coming up.

    What do you do? I've never actually made this dish. So, two questions:

    Canned beans or frozen? French cut or just regular?

    This looks like a pretty good recipe.

    As far as fresh or frozen, french or regular, I don't think it matters, go with what you like.

    As a professional chef I can tell you my mantras for cooking. 1. Chop sh1t up, season, add heat, then eat. Adjust as needed. 2. Cooking is art, baking is science. Mess up a cooking recipe, it usually still tastes ok. Mess up baking recipe, throw it in the garbage and start all over.

    I take it you are talking about the food you have been donating. If so, it may be due to the fact they use more canned goods so they just could be used to saying canned. It sounds like you are providing the finished product so I wouldn't think it should matter to them.

    Any type should work. Canned do usually have more sodium, but they can be rinsed off. Personally I think frozen taste more like fresh when eaten on their own, but in a casserole with all the other ingredients it doesn't matter. Regular or French will change the texture a bit but I would just use what you can find.

    My thinking is that many people have certain recipes they associate with Thanksgiving and for many, green bean casserole made with canned green beans, condensed mushroom soup, and canned fried onions are part of it. If it was any day but Thanksgiving, I'd say to healthy it up in whatever way you can. For Thanksgiving dinner, I'd say give them what makes them feel like home.

    I make green bean casserole every Thanksgiving and I make it with frozen, regular cut green beans. I prefer the texture, but I don't like mushy vegetables, so it's really a personal preference.

    Not the biggest fan of the traditional cream of mushroom/crunchy onion green bean casserole but I used fresh green beans and blanched them when I made the dish last year.
