never mind what you do with it, but what the heck is a cubanelle?
My acorn squash are coming in and they are dark green when I pick them. My understanding from online articles is that I have to wait until they're ripe before I pick them because they'll rot from the inside and I did, in fact, pick one when it was pale green just to test the theory.
Here's the thing though. The butternut squash still have pale green overtones but they are enormous. Do I just let them go until they're a nice tan?
Second question. I grew a boatload of jalapeno plants from seed because I thought they would be difficult to grow. Now I have a boatload of jalapenos. I found an online recipe for pickled jalapenos that says to just put the mix in a jar and leave it in the fridge.

Not actually can it but make the pickling liquid, put in the sliced jalapenos and put it in a jar. Has anyone ever done this? How long does it last? Did I read that wrong?
Edited to say: Can I throw cubanelles in with the jalapenos pickled mix? I don't know what I was thinking. What the heck do I do with a cubanelle?

ON the acorns.... I like to wait until the undersides (on the ground) are orangish to get the full flavor. Have never had any rot.
This is my first year for Butternuts and they are a ways off (still green).
Why not just freeze your jalapenos whole or pickle? I've done both w/ great success!

I've not tried acorn squash and DD and I love them.
Don't like butternut squash at all but Mom used to make a squash soup using them, along with bacon, and it's delicious. Of course, anything with bacon has got to be good.
My tummy doesn't tolerate any of the hot peppers.

One of the things I do with Jalapeno is make them into chipotles. They are dried and smoked you can use them year round. Most people don't realize chipotle peppers are smoked and dried jalapeno. Usually done with red jalapeno but greens work just fine.

We like them but give them to the dogs mostly. Acorn and butternut squashes along with pumpkin soothe the digestive tract. So I like to have a lot of them on hand. Usually I buy them by the crate from our local farm but last year it all rotted really fast so I'm growing them myself this year.
I have done acorns for several years. I almost hate to stop since I had one girl who would only eat (after she was bred) if I'd put "squishy squash" in her dish. LOL. Same dog has always LOVED zucchini and yellow squash too, so this year, I didn't get any yellow squash but had zukes. Then came a rogue squash plant which ends up looking like a yellow squash in the shape of an acorn!!! Whatever it is, the girls love it!
