I've never made kielbasa but it's on screaming sale and I wondered how much would be used in a typical kielbasa dish. After looking at a few recipes online, would it be fair to say that six people per pound makes sense? It looks like most recipes are for sliced kielbasa with other things like potatoes and peppers. Is that typical?

That looks good. Lots of other stuff in there so a total of about 4 1/2 pounds of food total for one pound of kielbasa. I'm looking at feeding 60.
I would do 1/4 # per person.

My favorite way to eat kielbasa is on a roll with sauerkraut. Make it all together in the oven get a bag of rolls and some potato chips or potato salad and it's an easy meal.

An easy meal to cook and serve:
Sauté onions and some garlic, add sauerkraut and kielbasa (cut up) along with red pepper flakes (as much as desired) until heated through. A side of boiled potatoes works great as an easy side.
You can stretch it to serve 6 depending on the ratio of sauerkraut to meat and the sides, but I agree with planning for 1/4# per person.
Also you could just heat the kielbasa and sauerkraut separately for sandwiches since not every one may like the sauerkraut.

huh i've never used it as a meal. We put some in our turkey stuffing and use it in slices for a snack (with cheese and crackers). If I am thinking of the right thing!
