I've been in the cat-sitter's shoes. Bed was covered with two pieces of clear, plastic hallway runner from big box home improvement retailer. Inverted bumpy side up to discourage cat from lounging on bed, and no sheets to cover. She still found ways to chill on it though. Overlapping in middle but still problematic the one time pee was close by. Easy to clean & wipe with de-odourizing/enzyme solution.

Waterproof tarp sounds good but, whatever your solution, be sure to consider if your cat lies close to edge or on pillows. Her weight & movement could cause pee to drip over onto side of the bed and onto the floor. Or maybe a zipped mattress wrap designed for children's bed wetting. Not too expensive. Not sure how waterproof if left alone until discovery & clean up.

Or maybe no access to the room during your trip or after first incident of peeing? However, could transfer behaviour elsewhere less obvious.

Cats are such interesting creatures. Someone once told me about checking on her friend's cat for a week. The friend lived in a condo same floor as hers and facing hers because the building was right next door. Both condos had floor to floor windows with only a foot of wall at the base. Her cat was the jealous type (how she knew that, I don't know) & liked looking through the windows at the other condo. So the woman crawled/slithered on the floor of her friend's living room out of sight to get to the kitchen to feed the cat & to clean the litter box. Crawled/slithered back to get out. One day, she forgot & walked through in clear sight. When she got back to her own condo, her cat had peed on her bed.

I can't think of anything different to try.

I forgot all about this. I got it for Asher when we went on vacation in Outer Banks. I wanted him to get up on the bed with me but I couldn't afford for any little accidents. He was crated at night but he was up on the bed a little. It never got tested but it may work for your situation.
