My second effort yielded a very nice cheese that tasted exactly like mozzarella but the texture wasn't right. Put it this way. It is a delicious fresh cheese that isn't anything quite like what I've had before but plated like mozzarella with balsamic vinegar and basil out of my indoor garden was great.

The age of the cheese will affect the texture and taste. The brand I prefer (the one my mom always bought) isn't carried in my area and is much firmer and has a stronger taste, relatively speaking since is still a very mild cheese. After buying a brand where the texture was much softer and was very bland, I noticed the age was much younger than my usual brands.
I use mozzarella mainly for caprese salads and to snack on. Caprese salads, the age and texture is more forgiving; for cutting off a hunk to snack on, I'm more picky and want the older, firmer versions.
Looks yummy-I'll be right over for a sample. Wait, not a sample but a LARGE plateful, this is homemade so it HAS to be great.
And YES, I am a cheese head!!!!!!!
Going to give it a third shot. My husband claims it had a better texture the next day but I can't verify that since he left such a small piece. That alone is worth the effort though. I have been cutting the recipe in half and will do a full recipe this time now that I have a bit of a clue. The flavor is right there. Frustrating that I couldn't get the texture.
This is very interesting! I must have missed your post about your first effort. You have goats, right? Is this goat cheese mozzarella?
