I'd never noticed a seasonal decline anywhere we used to frequent.
For those of you who work or have worked at decent restaurants (I was more of a fast food worker in the day), do the regular chefs / cooks actually leave during the summer and holidays?
We eat out quite a bit because of a particularly demanding client. It seems like everything goes south right around July. The food becomes inconsistent and sometimes inedible. We hear about new cooks being trained, the owners go on vacation, etc. Is that typical? We call it the B team, as in the B team was brought in so the food is now terrible.

If you're worried about restaurants in July, well, don't ask about teaching hospitals in July...
One of my kids chefs it up in a big restaurant in Manhattan. Summer is comparatively a slower time for them because so many local residents are on vacation and I guess the tourists in NYC don't completely fill the void. I think more people go on vacation then themselves because once Labor Day hits, they are back on high. Maybe the place you like hires some seasonal help when it's available so their regular staff can take vacations during the summer like "regular people".
