I've been looking up gazpacho recipes online but we're getting a little overwhelmed by the veg so this is my new recipe.
Chop up whatever is on the counter.
Puree all of the tomatoes and onions and half the chopped veg.
Mix everything together.
Season.
And there you go! I was overthinking it.

I have somewhat been doing the same with little homemade salsa the last couple of years. Throw it all in a blender and eat it with chips. Works out okay.
