I have never been successful with pot roast. Don't know why. Maybe the meat was too lean. Decided to try it again with new knowledge gained from watching Food Network. Bought a bunch of stuff at the grocery store before Christmas.
Made it over Christmas and it was pretty good! Not as flavorful as I wanted but I figured that was because I didn't make the gravy. I was particularly happy because we were really sick and I wanted a win.
Decided to make pork carnitas today. Went to the fridge and guess what I found. The chuck roast I had bought. The pork butt was gone. I actually made pot roast with pork.

A pot roast was not always my favorite, sometimes tough. Tried Ree Drummond's recipe, Pioneer Woman. The recipe in on the Food Network site. It's easy and delicious.

Here is the best pulled pork recipe in the universe, and I have had a lot of pulled pork!
Pulled Pork Dr Pepper
4 lb Pork shoulder
16 oz Dr Pepper (use the FULL SUGAR kind, it won't work with diet Dr P!)
yellow onion rough chopped
1 can chipotle peppers in Adobo (more for spicy, less for less spicy)
Season (salt and pepper) and sear the meat in a screaming hot pan on all sides, place into Crock pot on low with all the ingredients and cook for 5-6 hours, (until it's falling apart)
You can eat it this way, or add BBQ sauce after you shred it for BBQ sammies, it is also very good with scrambled eggs like machaca con huevos, or chorizo and eggs.

I actually used Ree's recipe so if you ever have some pork butt lying around and feel like a pot roast, it's a pretty good substitute!
Few years ago, Andrew was at our local butcher shop and they brought in some frozen birds. Andrew asked if they were turkeys and was told they were. Since Xmas was just around the corner and we had friends coming for dinner went ahead and bought one. Just the perfect size to serve four people. Xmas day rolls around and Andrew is carving the bird and remarks there’s no white meat. Our friend,who also hunts asked “are you sure it’s a turkey?” Well, that’s what they told us. Nah, I m pretty sure it’s a duck.
This has caused great laughter for the last couple of years. My friend said the only thing that would’ve made it better would’ve been the dogs snagging the duck and then we all needed to eat grilled cheese sandwiches with all the trimmings!
