I just finished baking for a competition that my husband is moderating. Pretty sure that I ate more than anyone there will and I have the sugar high to prove it. For some reason, I feel that everything must be sampled at every stage of the baking process, including the raw ingredients which may have spoiled since I used them last. Cooking is even worse. By the time I'm finished making the meal, I have eaten. Dinner is a two bite experience for me with some wine which I suppose is fine since my husband eats so fast that I suspect he's not actually chewing.
Is this normal? Do you feel that if you're making it, you should be eating it as you do?

Absolutely normal. When cooking something requiring chopped veggies, I'm sampling the entire time, along with Mardi and Archie. No salad at supper required, LOL. Baking is even worse. I'm sampling and taste testing the entire time. Sugar high is right! And heaven help if I can still stuff something in when cookies come out of the over, hot and yummy.
It depends upon what I'm making. I don't do much baking, at all, so if I do make something, I generally have gotten fresh ingredients. Everyday stuff, yeah, not so much. Tonight's dinner will be cumin lamb burgers with tzaziki + corn on the cob. I won't be tasting any of that before it's served. I taste sauces or salad dressings for seasonings, taste soups or stews, but obviously not raw meats, raw fish, raw eggs, raw anything. I usually taste finished stuff before serving but not enough to be full.

Sadly, that is how I eat almost exclusively. I too am often full by the time the good is prepared.
No samples until it's done and plated. I chase people out of my kitchen who try to snackle... namely DH and Luna. Occasionally the cat.

I call it quality control for on the fly adjustment as needed.
Most stuff I make without measuring so sampling is required

I taste as I go, at home and at the restaurant.

If I was cooking risotto for Gordon Ramsey in Hell's Kitchen, I would taste it before serving it because it never has enough salt.

When I am cooking, no way. No snacking. Cause what ever I am making is going to be good. The only exception would be beer in the rear chicken. You only need half a can of beer. Something has to be done with the other 5 and a half cans.
And Shush, I know that several beers stores and groceries sell just a single can. That's not the point.
However, when I go to my sisters she is a fantastic cook. I am often getting chased out for sneaking samples.

I taste as I go as well. Need to make sure the flavors are developing correctly.
