    Sriracha Lime Mayonnaise Dressing (dunno how to prefix it!)

    Fresh, local sweet corn has finally come in. We had our first yesterday and grilled it.

    We used this on the corn instead of butter. You could also use it as an aioli on sandwiches, as a veggie dip, maybe on cooked chicken or pork.

    INGREDIENTS
    1/4 cup mayonnaise
    1 tsp lime juice
    2 tsp sriracha sauce

    Mix ingredients in small bowl.

    Use as desired; unused portion will keep in the fridge.

    Sounds good! I did corn on the grill but used a recipe for elotes, which also had lime, mayo, chili powder, but some cheese and cilantro as well. Your recipe would certainly be easier! And it's messy but so good, right?

    It just depends on how much sriracha you use. I made a basic aioli with mayo, sriracha, and fresh chopped garlic that we used on a fried chicken sandwich special at the restaurant where I used to work. I used 1 cup of Mayo, 1/2 cup of sriracha, and about a tablespoon of the chopped garlic. It had some kick to it, but it was pretty tasty.

    You can always add a bit more mayo to the level of heat/spicy you want.

    I do sriracha mayo quite a bit but wouldn't have thought of the lime. Thanks!

    smartrock that elotes sounds good! Would you be willing to share the recipe?

    Barry’s right Snowshoe. You can start with less sriracha, or a milder hot sauce if you prefer.

    Barry that aioli sounds great. I might have to try that!

    Surely! I just used whatever chili powder was in my cabinet, I didn't rush out to get whatever this recipe calls for.
