    Mushroom recipes?

    Does anyone have a good mushroom forward recipe with nonstandard shrooms? I haven't been able to find mushrooms at our stores other than the buttons and portobellos so I signed up for an organic mushroom CSA at a local farm. It's just the most logical and cost effective way to get more and better shrooms. A pound a week is so many mushrooms though! I get how to saute them, put them in omelets, made Hungarian soup out of oyster shrooms and made an Asian flavor marinated lion's mane steak and "crab" cake but I'm running out of ideas and most cookbooks and online recipes call for those whites and portobellos. Having so many mushrooms on hand in such a variety made me realize that I don't really know how to cook with most of them.

    I'm only two weeks into this CSA but am probably looking at oyster, lion's mane, shiitake, trumpets, pioppino and others that I don't know about yet. Any thoughts would be appreciated.

    I have a couple of recipes that call for a variety of mushrooms but some are from sites where the recipes are behind paywalls. I've converted a few to a .pdf that I have saved on my computer but I don't know if I can attach it here. I'll include the original links in case you can view them. First is for a mushroom bourguignon from the NYTimes that says to use as wide a variety of mushrooms as you can get your hands on. I'll look for others that call for more of a variety than portobello or cremini in my ridiculous collection of recipes.

    I haven't tried them all but if any sound good from the names and you cannot open them, let me know and I'll see if I can figure out how to attach a .pdf I could probably also print the entire recipe out here but it would take a fair amount of space, although after you copied it, if desired, I could edit the post to take out the recipe, too.

    Great ideas. I really like the roasted and quiche ones. Spinach and mushrooms too, of course. I don't know if I have a lack of imagination right now or am kind of overwhelmed. Thank you.

    This is what the shares have been so far. They're supposed to be a pound but I weighed the lion's mane and it was a pound and a half.
